On my way to meet with a friend yesterday, I passed a Pret a Manger. It was early in the morning and there was a familiar waft from the ubiquitous sandwich chain that transported me back to my carb consuming days when I would leave the underground at Oxford Circus and grab their warm Ham and Cheese Croissant for a hasty breakfast at work.
Well, I just had to attempt to replicate a low carb version when I returned home. The trusty and now classic Fathead pizza base recipe came to mind to replace the pastry and for the filling I used cream cheese and chopped ham topped with a little cheddar…I did forget the shrivelled slice of tomato that used to garnish my favourite Pret pastry but close enough.
Looks remarkably authentic! I too had forgotten that tomato. God only knows how they nuked it to that state.
