Cauliflower Tabbouleh

Struggling for another way to consume my quota of cruciferous vegetables I was inspired by a Jamie Oliver recipe from his super-foods book replacing the brown rice with the cauliflower.

I have always been a little apprehensive of using cauliflower without disguising its acrid scent with lashings of cheese or butter but in this recipe the result was a fresh, tasty and surprisingly satisfying salad that is a meal in itself or as a side dish.

The only preparation is chopping and the ingredients can be varied according to taste but in this recipe I lightly steamed then cooled the cauli rice first.

Ingredients
200g Cauliflower Rice
Fresh Parsley
Spring Onion
Fresh or Dried Mint
Cucumber
Black Olives
2 tbl Olive Oil
Juice of half a Lemon
Feta Cheese
Sea Salt
Fresh cracked Black Pepper
